Learn how to make Healthy & Delicious 'Soba Noddles Salad' with our chef Varun Inamdar.<br /><br />Soba is the Japanese name for buckwheat. It usually refers to thin noodles made from buckwheat flour or a combination of buckwheat and wheat flours. They contrast to thick wheat noodles, called udon. Soba noodles with salad boost its nutrition level and even the combination is extremely delectable. <br /><br />Ingredients:<br />(Serves 2)<br />- 1 cup Soba Noodles(boiled)<br />- 2 tbsp Oil <br />- 1 Garlic Clove(grated)<br />- 1 tsp Ginger Paste<br />- 1 tbsp Celery(chopped)<br />- 1/2 tsp Chilli Flakes<br />- 3 tbsp Soy Sauce<br />- 3 tbsp Chilli Sauce<br />- 1/2 Red Bell Pepper(julienne)<br />- 1/2 Capsicum (julienne)<br />- Bok Choy Leaves <br />- 8-10 French Beans(chopped)<br />- 1 cup Red Cabbage(shredded)<br />- 1 cup Green Cabbage(shredded)<br />- 1/2 cup Corn(boiled)<br />- Basil Leaves <br />- Salt<br />- Sesame Seeds<br /><br />Method:<br />1. Heat oil in a pan and add grated garlic clove, ginger paste, chopped celery<br />2. Turn the flame to high and saute it<br />3. Now, add chilli flakes, soy sauce, chilli sauce and saute it <br />4. Add red bell pepper julienne, green capsicum julienne, carrot julienne, bok choy leaves, chopped french beans, shredded red cabbage, shredded green cabbage, boiled corn<br />5. Mix it all together and add in boiled sabo noodles, along with some basil leaves and salt<br />6. Toss the noodles with the veggies and the spices <br />7. Take it out in a plate and top it with some sesame seeds
